Broasted chicken

Broasting is a pressure-frying method for cooking chicken and other meals. It simply combines pressure cooking with deep-frying marinated and breaded chicken. On the subcontinent, broasted chicken is extremely popular.

INGREDIENTS

  • Oil for deep frying

FOR CHICKEN:

  • Chicken with skin and bones – 1 whole chicken cut into 12 pieces
  • Salt to taste
  • Black Pepper to taste
  • Lemon Juice or vinegar – 1 tblsp

FOR FLOUR COATING:

  • All Purpose Flour / Maida – 2 cups
  • Cornflour – ¾ cup
  • Garlic powder – 2 tblsp
  • Dried Parsley – 1 tblsp
  • Dried Oregano – 2 tblsp
  • Dried Basil – 1 tblsp
  • Salt to taste
  • Black Pepper – 2 tsp
  • Chilli Powder – 1 tblsp

FOR EGG:

  • Egg – 2
  • Water – ¼ cup
  • Salt to taste

INSTRUCTIONS

  • Mix chicken with salt, pepper and vinegar and set aside.
  • Take flour in a bowl along with all ingredients given together. Set aside.
  • Take egg, salt, water in a bowl and whisk well.
  • Now take chicken, coat in flour, then dip in egg and then coat in flour. Pack it well.
  • Set aside in a plate to dry for 5 mins.
  • Heat oil in a pressure cooker, drop chicken in and fry for 30 seconds to 45 seconds.
  • Cover the cooker and pressure cook for 1 or 2 whistle.
  • Now switch off the flame and let it sit for 5 mins.
  • Now release the pressure carefully by lifting the whistle with a spoon.
  • Now open the cooker, and heat it again and fry till the outer layer gets crispy again.
  • Now drain it and serve hot.

1)This is 1 whole chicken cut into 12 pieces. Use chicken with bones and skin on for best result. Take chicken in a bowl, add salt and pepper

2)Add vinegar and mix well

3)Make flour coating. Take flour, cornflour and salt in a bowl

4)Add in garlic powder, parsley, oregano, basil

5)Add in black pepper powder

6)Add in chilli powder

7)Mix well

8)Take egg in a bowl, add in salt

9)Add in water

10)Mix well

11)Now time to make the chicken

12)Take chicken and coat in flour

13)Coat well

14)Dip in egg mix

15)Coat it again in flour. Coat really well

16)Let the chicken dry for 5 to 10 mins

17)Heat oil in a pressure cooker for frying

18)Drop chicken in

19)Cover the pressure cooker and cook for 1 or 2 whistle

20)Turn off the heat and let it stand for 5 mins. Now release the cooker using a spoon

21)Now switch the heat on again and keep frying till chicken outer layer is crispy again

22)Total this process will take around 8 to 10 mins

23)Drain the chicken

24)Serve
